Special Banana Pancakes

My children enjoy pancakes immensely. When I have time, I like to make what we call “special pancakes”. These are the pancakes that… don’t come from the freezer. Mommy gets the ingredients together, and lovingly prepares a variety of pancakes to everyone’s delight. Very special indeed! I experiment with pancake recipes to ensure that we are experiencing different tastes, and sometimes different textures too. I came across a recipe that made me so eager to try – Banana Bread Pancakes. Oh my goodness. So light and fluffy and banana filled. I did make a small change… I added Quinoa Flour. I went half and half with it. Good choice.

I can’t tell you how this little pancake griddle brought such delight to my children. I told them we were having “bug pancakes”. Somehow, they found that really, REALLY funny. The sound of your children’s laughter truly is a beautiful thing. Now every time I see this griddle, I’ll remember their smiles, and how much we enjoyed these mini-pancakes.

Special Banana Pancakes

A tasty breakfast for the family to enjoy

Serves: 8
Ingredients
  • 1 Cup unbleached, all-purpose flour
  • 1 Cup Quinoa Flour
  • 2½ tsp baking powder
  • ½ tsp baking soda
  • 4 tbsp sugar
  • ½ tsp salt
  • 1½ cups buttermilk (1%)
  • 2 large eggs
  • 6 tbsp butter, melted
  • 1 tsp vanilla
  • 2 ripe bananas
  • Cooking spray
Instructions
  1. In a small bowl, add flours, baking soda, baking powder, sugar and salt. Whisk to combine
  2. In a medium bowl, add buttermilk, eggs, melted butter and vanilla
  3. Gently combine dry ingredients into the wet
  4. Crush the banana with a fork, and fold into the batter
  5. In a hot griddle, spray with cooking spray
  6. Add ¼ cup of batter onto the griddle or pan
  7. Cook until bubbles appear on the sides, about 1 minute or so untill golden brown
  8. Flip and cook for another minute
  9. Serve with maple syrup and/or fruits
Notes
I used a special pancake griddle that yielded mini-pancakes. I ended up with over 40 pancakes. If you are using a regular griddle, you will have less.

 

 

 

These pancakes were so delicious. I honestly did not need any syrup. The kids started to eat them without any syrup but half way through, they asked for it. I guess pancakes are supposed to have syrup on them. I look forward to making these again. Using the griddle did take more time, since the pancakes are smaller. Maybe next time I’ll use a regular griddle. Bigger pancakes 🙂

Whole Wheat French Toast

Hello friends! Can you believe it’s already February? Wow, time certainly flies. I’m looking forward to creating more recipes and working on my photography. How am I doing so far? I’m so excited for what this year has in store! My love for photography is never-ending! And apparently, its keeping a lot of folks quite hungry too 🙂

I picked up a loaf of whole-wheat homestyle bread at the supermarket and I couldn’t wait to dig into it. The thing is, when you buy a loaf of bread like this, you have to eat it all within a day or so of cutting it otherwise it will get hard. After that, the only thing it will be good for is breadcrumbs. And that’s not a bad thing ~ I’d just prefer to eat it :-). I thought it would be a good idea to make French Toast using lovely thick slices of fresh bread. Its a family favourite and its a change from the usual suspects around breakfast time. I used French Bread before to make French Toast. Do you remember that post? Here it is: Stuffed French Toast. That was some tasty toast! But time is always a factor in getting breakfast ready. So the traditional way was good for me this time around. The kids loved it and so did I!

 

Whole Wheat French Toast

An easy breakfast for the family to enjoy

Serves: 5
Ingredients
  • 1 Loaf Whole Wheat Bread
  • 2 Eggs
  • ½ Tsp Cinnamon
  • ½ Cup Milk
  • Butter
Instructions
  1. Slice loaf into thick slices, about an inch thick
  2. In a rimmed dish, whisk eggs, cinnamon and milk until well combined and a smooth consistency is achieved
  3. Dip each slice of bread into the egg mixture ensuring that both sides absorb some liquid. Be sure not to over soak the slices
  4. In a skillet, melt about 2 tbsp butter (to start as you'll need more as you go along)
  5. Place each slice of bread in the skillet, browning on each side for about 3-4 minutes until golden brown
  6. Serve with fruit and maple syrup
Notes
Makes about 8 slices of french toast.

Creamy Orzo With Pancetta

I had an opportunity to try a pasta called orzo. It’s a small pasta shaped like a grain of rice quite suitable for salads, soups, risotto or creamy pasta dishes. It’s a wonderful addition to my Pantry. This is a very quick and easy week night meal that I hope you’ll enjoy as much as I did. I made quite a few changes to the original recipe but I was more than happy with the result. Sometimes, all you need is an idea to get your creative juices flowing. The texture of this recipe reminds me of a risotto since the pasta has to absorb the liquid that it is cooked in.

I enjoyed making this dish and I can actually think of a few variations that I would love to try – like meatless, or with chicken instead of the pancetta. I love that there are so many options. The first time I made this dish… I forgot the cheese. I’ll just call that the “reduced calorie” version 🙂 It looked pretty though, and tasted great too.

Orzo with Pancetta

 

Creamy Orzo With Pancetta

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients

  • 1/4 Cup Diced Pancetta
  • 2 Tbsp Butter
  • 1 Small Onion, finely chopped
  • 1 Clove garlic, finely chopped
  • 1 1/2 Cups Orzo
  • 2 1/2 Cups Chicken Broth (low-fat, low-sodium)
  • 1/2 Cup Green peas (thawed from frozen)
  • 1/2 Cup Grated Parmesan Cheese
  • Salt and Pepper

Instructions

  1. In a dutch oven (or deep pot), melt butter
  2. Add garlic and stir for about a minute
  3. Add onion, then sauté until translucent
  4. Add Orzo and allow to "toast" in order to bring out the flavour
  5. Add salt and pepper
  6. Add broth and cook for about 20 minutes, stirring occasionally
  7. When orzo is fluffed up, add pancetta, stir and allow to warm through
  8. Add green peas. Stir to combine
  9. Add parmesan and stir
  10. Allow to warm through, about 3-5 minutes
  11. Serve and enjoy

Hoisin Salmon with Quinoa & Zucchini

Salmon and Quinoa were first paired together by me about 4 years ago when I started to make serious changes to my diet. My chiropractor at the time, taught me about the benefits of whole grains and consuming less sugar. I was determined to learn more about how food can help heal the body. It took me a while to get used to eating certain vegetables that were fairly new to me. Zucchini was one of them. With benefits like – being a great source of vitamins A & C, folate, fibre and potassium, I had to find a way to LOVE this green goodness. Combining it with Quinoa, a grain I fell in love with immediately, seemed pretty practical 🙂

Simple. Healthy. Delicious.

 

Hoisin Salmon with Quinoa & Zucchini

Hoisin Salmon with Quinoa & Zucchini

Salmon seasoned with hoisin sauce and served with Quinoa and zucchini

Ingredients
  • 2 pieces skinless, boneless, salmon steaks
  • salt & pepper
  • 4 Tbsp Hoisin Sauce
  • 1 Cup Quinoa, rinsed and drained
  • 2 Cups fat-free, reduced sodium Chicken Broth
  • 1 Medium zucchini cut up into ¼ inch pieces
  • 2 Tbsp Olive Oil
Instructions
  1. In a medium sauce pan, add chicken broth and quinoa. Bring to a boil, reduce heat and cover for about 10 minutes
  2. Add chopped zucchini, stir and cover for another 5 minutes or so until all the broth has been absorbed
  3. Season salmon steaks with salt and pepper
  4. using a brush or the back of a spoon, spread hoisin sauce on both sides of the salmon
  5. Add olive oil to a skillet and set heat to high
  6. Add salmon to the hot skillet, presentation side down first
  7. cook for about 6 minutes per side, or until cooked through. Remove from heat
  8. Remove quinoa from heat and fluff with a fork
  9. Serve and enjoy
Notes
Optional: Add sweet corn or diced sweet peppers to the quinoa in addition to or instead of using zucchini

 

I always say that eating healthy doesn’t have to be hard. Perhaps I say it often to remind myself. At the same time, I hope I am reminding others. I think this recipe is a perfect example. I started making this dish a few years ago and now I make so many variations of it, I can hardly keep track. Adding various vegetables in the quinoa mix is always a great idea. Diced Carrots, Sweet Peas, Sweet Corn, Sweet Potato, Butternut Squash, to name a few. All these things go nicely with quinoa.

Happy New Year 2012!

I just wanted to start the year off by thanking everyone for all their support and encouragement since I created The Lovely Pantry. I have so many ideas for recipes and concepts for photographs. I’ve grown so much and met so many wonderful people along my journey so far. I’m excited and grateful to be able to continue my passion through this medium. The holiday season has been quite busy for me, to say the least. But it was wonderful to be around friends and relatives and to share meals and watch the children play together. I miss my own family immensely (parents, brother, cousins etc) but hopefully I will get to see them later this year. There’s nothing like having your own family with you during the holidays! I’m still very thankful and blessed for those that I have around me that make me feel “at home”.

Now that things are slowing down a little bit, I have a lot of posts to catch up on! I have a few goals for myself which includes posting more often, improving my photography, meeting more foodies and making bread! Those are just a few things I have on my list. Below are some photographs of a meal I prepared for an informal gathering at my home during the holidays. No recipes today. 🙂 I still have to show you what I cooked for my own family after Christmas. I found a new love for cookies! My husband says he thinks he’s found his new favourite cookie – this may mean trouble for me! 🙂

The menu is as follows, served with Jamaican style Rice and Peas:

Lemon Herbed Salmon. I’ve made this before – here’s the recipe. Underneath that herbed crispy topping, is moist salmon. It was lovely.

My guests specifically requested Oxtail! I aim to please! I don’t have oxtail very often but I definitely indulge the few times for the year that I actually make it. It brings back memories of Jamaica.

Perhaps I went a little overboard, but you have to know that I enjoy feeding people. I also love getting feedback from my experiments! So basically I used the Ginger Carrot Bread recipe and modified it. I split the batter in 2 and used smaller loaf pans to bake them in. I made a plain Ginger Carrot Bread, and another with raisins. I modified the same recipe and used Vanilla Chai Soy beverage instead of carrot juice. I made it before so I knew what it would taste like however, this time (again, I split the batter) I made one with dark chocolate chips and the other with dried cherries. Then of course I made a cake that I had not tried before – Orange cake made with orange rind and freshly squeezed orange juice. Heavenly! I will be posting that recipe very soon!

After a night of entertaining, I decided to make cookies. I don’t usually make cookies but I realized if I’m going to be a kitchen Goddess, I need to be able to make everything! 🙂 They turned out to be a success and I was even able to give them as gifts during the holiday season. Well, not the one’s my hubby loved the most.

And finally, this is the reason my husband adores me. Peanut Butter Chocolate Chip Cookies. No flour required. I was even able to use low-fat peanut butter, clearly for my own satisfaction. I plan to use organic peanut butter next time to see if there’s any major difference in the taste. That’s our secret though. He doesn’t have to know.
