Cookies and Crafts for Sandy Hook #BloggersforSandyHook

As you already know, there was a horrific tragedy that took place in Newtown, Connecticut at Sandy Hook Elementary School on December 14, 2012. As a Mother, a parent, my heart, along with the hearts of countless others, was broken. My heart still aches. My thoughts and prayers go out to the Newtown Community as well as to the families of all those who were affected.

These are trying times, and now more than ever, we must treasure and value the time spent with our children. This Christmas will be devastating to some, who will have to spend it without their beloved child. That in itself is a terrifying thought. I cannot begin to imagine the grief being endured. Please do all you can to support the community and the affected individuals. 

I am a member of a wonderful Facebook community who wanted to organize a way for bloggers and people all over the world to show their tribute and unite in support of Newtown, Connecticut and Sandy Hook Elementary School.

It’s times like these when we feel helpless; we want to DO something but we don’t know what.

On Friday, December 21, 2012, we are going to honor the victims, families, and community of Newtown by doing a post in their honor. Cookies and Crafts for Sandy Hook will be one way we can show support in the aftermath of this unimaginable event.

On Friday, December 21, write a post sharing a cookie or a craft and a tribute to Sandy Hook Elementary School. There is no specific requirement…just do or make something to show your support. Maybe something you would make for, or with, your children.

Please spread the word about this united effort wherever you can. You can use the hashtag #BloggersforSandyHook.

Don’t have a blog? That’s okay. You can still share something for Sandy Hook. Take a picture and post it on your Facebook wall, your Twitter feed. Share on Instagram or your Google+ or wherever you can in order to unite us in our tribute.

Something people always think about in times like this is how they can help monetarily. After some searching Dorothy of  Crazy for Crust and Ashton from Something Swanky found the Newtown Youth and Family Services website. According to their website, Newtown Youth and Family Services, Inc. is a “licensed, non-profit, mental health clinic and youth services bureau dedicated to helping children and families achieve their highest potential. NYFS provides programs, services, activities, counseling, support groups and education throughout the Greater Newtown area.” All donations made to them are going to go back to those affected by the school shooting. You can go to their website here to donate.

 

Many bloggers have Etsy shops or businesses and have expressed a desire to donate some profits from sales on Friday, December 21 to this organization or others to help the victims, their families, and the community. Jamaican Sorrel for #SundaySupper

There is always something new going on in my kitchen.  This beverage is a big deal…to the husband. Sorrel is a drink he loves and until now, he had to depend on someone giving it to us as a gift or going to Jamaica to have the real authentic drink. Sorrel is a popular beverage to have during the Christmas season. I’ll confess ~ I never really liked sorrel. Give me some other tropical drink. Give me soursop juice, carrot juice or fruit punch. Just not sorrel. Well, it seems that my taste is changing. I don’t know what I was thinking. Sorrel is amazing! Around this time of year in Jamaica, most households, family gatherings or formal gatherings will have Sorrel in their selection of beverages.

It’s getting good use! I was happy to have it so I could share this recipe today. Please be sure to check out the other beverages and appetizers brought to you by the #SundaySupper family. Everyone that I’ve asked makes sorrel a little differently. Some people add a little wine to it. Some add a “little” White Rum, which is true in most cases. I didn’t do too much adapting but I plan to tweak it a bit more on the next round. I’ll add more ginger and just a little less sugar. This was a bit sweet for me but easily rectified by diluting it and adding ice. Sorrel is best served ice-cold. For my household, I omitted the rum because I wanted to be able to drink it at any time during the day, and also I wanted my children to be able to taste it. My children drank it several times, and that truly made me happy.

Jamaican Sorrel

A traditional Jamaican Beverage for the Christmas Holiday Season

Ingredients

  • 3 Cups Dried Sorrel
  • 1 inch Root Ginger, shredded
  • 12 Whole Cloves
  • 5 Pimento Leaves
  • 6 Cinnamon Leaves
  • 12 Cups Boiling Water
  • 2 Cups Granulated Sugar
  • 1 Tbsp Freshly squeezed Lime Juice
  • 1 Tbsp Rice

Instructions

  1. Rinse the Sorrel sepals in a strainer under cold water for just a few minutes
  2. In a very large pot, add sorrel, ginger, rice grains, cloves pimento leaves and cinnamon leaves
  3. Pour boiling water over the contents of the pot and cover for 24 hours
  4. Strain the liquid into another large pot and add sugar and lime juice
  5. Stir to combine
  6. Transfer into bottles and chill
  7. Serve ice cold

Notes

This yields just over 2 litres of sorrel (optional) 1/4 Cups White Rum can be added to the pot after the sorrel has been strained and sweetened

So some of you may be wondering…”What is Sorrel?”. Jamaican Sorrel is a type of Hibiscus plant (Hibiscus Sabdariffa). The sepals are used either fresh or dried to make a refreshing cold beverage or a hot tea. Sorrel can also be used to make Jams and Jellies. Sorrel is seasonal and is ready around December-January, making it the perfect holiday beverage.

This is a very important step. Steeping the Sorrel for at least 24 hours allows for a very rich, full-bodied liquid. I allowed mine to steep a little longer. I love all the natural ingredients that make up this drink. If unsweetened Sorrel wasn’t so extremely sour, I’d omit/reduce the sugar. But the sugar is a very necessary component. Substitutions will ruin this drink.

Sorrel is an excellent gift. It can be made with or without alcohol – either way, it is extremely enjoyable. It can also be kept in the fridge for a long period of time! Especially with the addition of rum as a preservative.

Pumpkin Cheesecake Muffins

I didn’t get to indulge in my usual #MuffinMonday this week. Sadly I’ve had to deal with 2 sick kids plus I’m trying to get over a little cold/cough. It’s the season to share in a little more than just holiday spirit. I believe we are on the mend and this means I’ll be back in the kitchen, whipping up something great for you. I do have a muffin recipe that I wanted to share that I made a few weeks ago but didn’t get to post it. I’m so glad that I got to use up some pureed pumpkin that I had in the freezer.

I get so much junk mail delivered to my door, and I usually just recycle. But there was a flyer for a local business that caught my eye. The photograph on the flyer had me drooling. It had a recipe that looked so delicious, I went ahead and made it. And it was so good! I have no idea where the original recipe came from so I have no reference for it. But here it is!

 

Pumpkin Cheesecake Muffin

Pumpkin Cheesecake Muffins
 
Ingredients
  • Filling:
  • 4oz Cream Cheese, softened
  • 1 Egg
  • ½ Cup Icing Sugar
  • Muffins:
  • 1½ Cups All Purpose, Unbleached Flour
  • ½ Tsp Ground Cinnamon
  • ½ Tsp Ground Nutmeg
  • ½ Tsp Salt
  • ½ Tsp Baking Soda
  • 2 Eggs
  • 1 Cup Sugar
  • 1 Cup Pumpkin Puree
  • ½ Cup Vegetable Oil
Instructions
  1. Preheat oven to 350F
  2. In a small bowl, combine cream cheese, egg and icing sugar. Mix until fully blended. Set aside
  3. Line muffin pans with paper liners
  4. In a medium bowl, add flour, cinnamon, nutmeg, salt and baking soda. Combine with a whisk.
  5. In a large bowl, add eggs, sugar, pumpkin and oil. Mix on low-speed until fully combined.
  6. Gradually add the flour mixture into the pumpkin mixture and blend just until incorporated
  7. Fill each liner with ⅔ batter
  8. add 2 Tsp of the cream cheese mixture in top of the batter
  9. Bake for 15 minutes

Double Chocolate Cranberry Cookies for #SundaySupper

Cookies! Last year, I wondered if I could make them. I did …and they came out great! this year, I’m all in! I’m experimenting and finding tons of awesome cookie recipes. I’m not going to get to try them all but I’m building up a nice collection! That’s what makes this #SundaySupper so awesome! This weeks theme is Holiday Cookie Exchange! The titles are wonderful and I can’t wait to see everyone’s cookies!

Who doesn’t love a good cookie? We love cookies at my home, but I don’t buy them often. I feel much better making them myself, even if it’s just for the season. It also brings me comfort that they are home-made, and made with love. And a few chocolate chips. After all,  chocolate is love, right? Check out my Peanut Butter Chocolate Cookies and Ginger Molasses Cookies. Crowd pleasers!

The cookie I’m sharing with you has been tested by me twice. I guess when I say “me”, I really should be saying “us”. The first batch was good, it was finished quickly and you know that’s a good sign.I made some slight changes on the second batch. I used a bit more cocoa powder and used white chocolate chips instead of dark. That’s all. And that’s what I’m sharing with you today.

 

Double Chocolate Cranberry Cookies

These cookies are sweet with a hint of tartness. A wonderful combination and very festive.

Ingredients
  • 1 Cup Wholewheat Pasty Flour
  • ½ Cup Dutch Processed Dark Cocoa Powder
  • ½ Cup + 2 Tbsp Butter, softened
  • ½ Cup Brown Sugar
  • ¼ Cup Granulated Sugar
  • ½ Tsp Baking Powder
  • 1 Egg
  • 1 Cup White Chocolate Chips
  • ¾ Cup Dried Cranberries
Instructions
  1. Preheat oven to 350F
  2. In a small bowl, sift in flour and cocoa powder. Combine with a whisk. Set aside
  3. In a large mixing bowl, beat butter, brown sugar, granulated sugar and baking powder until combined
  4. Beat in egg until combined
  5. Beat in as much as the flour with the mixer
  6. Fold in chocolate chips and cranberries with a wooden spoon or spatula
  7. Using a cookie scoop, take up rounded portions and roll into a ball. Flatten then round the edges.
  8. Place on a parchment lined cookie tray with about 2 inches apart.
  9. Bake for 8-10 minutes. Remove from oven and allow to rest in the tray for about 2 minutes before transferring to a wire rack to cool completely

This recipe yielded 33 cookies Store in an air tight container for 3 days at room temperature or freeze for up to 3 months

 

I’m no cookie expert. In fact, I’ve made cookies that could compete with a rock. I kid you not. I didn’t give  up though. I had to really learn about the importance of cooking time, and not necessarily how they look when they come out of the oven. Baking for too long, is just a no-no. The good thing about cookies is that once you get the hang of it, its smooth sailing after that!

To make these cookies, I did a test run first with about 3 cookies. I learned that they do not spread much. I found that they came out  better if I hand rolled and formed them. I used a cookie scoop so the cookies were very similar in size. Who ever came up with those scoops is a genius.
