Zucchini Pineapple Quick Bread #TwelveLoaves
Well, I think I found a bread that my husband is willing to defend and protect. When I told him what I was making, I got a slight side-eye and a very questionable look. This is what happens when I try to put vegetables in almost everything. Especially zucchini, which, by the way I once couldn’t stand. And now, I think it is perfection. And on top of that, I decide to add a fruit too. Clearly, I’ve lost a few marbles. My husband’s curiosity peaked as the aroma took over the kitchen. It’s so cute when the husband and the children are asking when the bread is going to be ready. Yes folks, this was the excitement that took place because of this wonderful Zucchini Pineapple Quick Bread.
Ingredients
- 1 1/2 Cups All Purpose Flour
- 3/4 Tsp Ground Cinnamon
- 1/2 Tsp Salt
- 1/2 Tsp Baking Soda
- 1/4 Tsp Baking Powder
- 1 Egg
- 1 Cup Sugar
- 1 Cup shredded zucchini (1 medium zucchini)
- 6 Tbsp Vegetable Oil
- 1/4 Cup Egg White
- 1 Tsp Vanilla Extract
- 1 8oz Can Crushed Pineapple in juice, drained
- Baking Spray with Flour
Instructions
- Preheat oven to 325F
- Grease a loaf pan using baking spray with flour, or just grease and flour the pan
- In a large bowl, combine flour, cinnamon, salt, baking soda and baking powder. Whisk to combine.
- In a large bowl, beat egg + egg white until foamy
- Beat in Sugar, oil and vanilla
- Fold in the zucchini and pineapple
- Transfer batter into the prepared loaf pan
- Bake for 325 for an hour or until a toothpick inserted in the centre comes out clean
- Allow to cool for 10 minutes before transferring to a wire rack to cool completely
- Slice, serve and enjoy.

As usual, waiting for a sweet-smelling bread like this one to cool is always a challenge. Even the baker it is eager to taste the finished product. I loved how easy this bread was to make. Although the baking time of an hour seemed a bit long, it was well worth the wait. The moisture of this bread is unbelievable!
This is such a wonderful and moist bread. I’m excited just posting about it. I was considering making it again with Spelt flour or some other flour with higher nutrient value. I was asked NOT to change anything about the recipe/ingredients. Well, I guess there is nothing more to say. This quick bread is hubby approved! I will still probably go ahead and try it with spelt just because I really want to.

I’d get that same questionable look from my hubby…but he wouldn’t even take a bite of any quick bread. He doesn’t know what he’s missing! It wouldn’t bother me, because I’d be thrilled to have this whole delicious loaf to myself. It sounds amazing, Lyn!

My first zucchini bread ever (one of my early posts) has pineapple, and it´s so good! I don´t think I ever want to make it any other way. This sounds perfect Lyn, and it´s no surprise your husband is willing to stand up for it!

When I first made zucchini bread I knew if I told my husband what it was he wouldn’t even try it. All it took was one taste and he went for a couple of slices. It was fun to tell him it was zucchini bread and watch the look on his face.
I like you addition of pineapple. It’s an extra sweetness and flavor bump.

lol, this must be amazing if your husband is so protective of the recipe! Your zucchini bread looks incredible, Lyn. The crust looks so crunchy and crispy, while the inside is crazy moist. I can easily see myself eating this entire loaf in a very short time span. But I won’t feel guilty because hey, it’s got all that healthy zucchini in there 😉

Aw yum! I love zucchini bread! I’ve never made it with added pineapple though, but I imagine it must be an amazing flavour combination (and yay for more vegetables and fruit in baked goods!). Love your story about your husband and kids… haha, my husband normally takes no notice when I’m in the kitchen. I think he has absolute trust in what I give him (he’ll taste absolutely anything). I have no luck in feeding kids so far though. A few of my friends have little ones and they always end up turning their nose up at anything I give them except bread or cookies!

Sounds like my kids, Laura. Such picky eaters! I try with them though. Somehow they still manage to function. Try making this with the pineapple. So out of this world good!

This bread looks so so fluffy and moist! Love that your family appreciates having fruit and veggies in their bread. Now let me see if I can convert my hubs over to this side of the fence.

Pineapple is such a good sweetener for baking I just love it! And zucchini is so good in quick bread. I never thought I would actually say that! Your bread is so beautiful! It makes me want to get back in the kitchen and bake! I hope you are having a good week.

Yeah, don’t we all have one of those at home? My son sees a green or orange fleck – one single fleck – and accuses me of putting something healthy or “weird” into my cakes just to force him to eat it. Trickery at its worst! But I love zucchini bread! Sweet, earthy and so moist. This is one great recipe!
